Consideration might be given to making this soup the night before. This you would do to further enhance the flavor of this delicious soup in anticipation of serving it the next day. Flavor improves with age.
Rinse beans. Cover with water and soak for 3 hurs. Put beans in 2 1/2 quarts of water and add: 1 pound ham pieces and the enclosed packet of spices. Cook at least 4 hours. After the beans cook add 2 small cans of tomatoes.
