Purchasing your own Freeze Dryer has numerous advantages, allowing you to freeze dry the exact foods you want, permitting you to save food before it spoils, and eliminating many of the pitfalls of canning, freezing or dehydrating. Proper storage, however, is a must if the goal is to achieve safe and effective long-term storage of those foods.
Freeze dried foods can readily be rehydrated and can often be restored to their "garden fresh" state in mere minutes. Unfortunately, leaving them exposed to the normal, oxygen rich, moisture laden air about us can begin that rehydration process prematurely, and the potential 25 year shelf life will be dramatically reduced.
To avoid these problems, food fresh from the freeze dryer should promptly be placed into some sort of appropriate storage container. These could include vacuum sealed jars or bags, heat sealed mylar bags with oxygen absorbers, or food storage cans (again containing oxygen absorbers) that could be sealed using a dry pack canner.
