With canning you are limited in what types of foods can be safely canned, and must definitely take precautions as to what canning methods are used. Refrigeration, of course, is handy for temporary storage of food, but emphasis must be placed on that word "temporary". Freezing can add from a few months to a few years of shelf life to stored foods, and does much to preserve the "fresh food " taste of foods that are being frozen, but the amounf of freezer space available places definite limitations on how much food can be stored in this manner. Plus, freezers are notoriously difficult to organize. Dehydrated foods store easily and do not require an ongoing use of electricity to maintain that storage, but not all foods are suitable for dehydrating, and foods that are dehydrated, even when rehydrated, have lost something when it comes to appearance, nutritional levels and fresh food taste.

Freeze drying overcomes almost all of these difficulties and provides an end product that looks great, tastes fantastic, loses almost nothing by way of nutrition and can be safely and easily stored for years.
