OvaEasy starts with wholesome fresh eggs and gently evaporates the water, leaving only little crystals of pure egg. That's why they are called egg crystals!
OvaEasy Egg crystals may look like other powdered eggs, but there the similarity ends. Other dehydrated and powdered eggs are dried at very high temperatures. High temperature cooks the eggs during the drying process which is why they lose their fresh taste. OvaEasy does things differently. The OvaEasy process is special because it works at low-temperature and doesn't damage the flavor or functionality of the eggs.
Freeze Drying may not require heating, but it does require freezing, and freezing damages an egg's protein which also causes problems with flavor and functionality. That's why the folks at OvaEasy only use fresh eggs, not frozen!
Easy to Store. Easy to Use.
OvaEasy Egg Crystals are not likely to soon replace eggs in the shell, purchased from your local grocer, and made ready in the refrigerator for upcoming meal and baking needs. You would lose nothing in taste and nutrition by making the switch to OvaEasy eggs, but it would cost slightly more to do so.
On the other hand, eggs in the shell are not particularly suitable to take on camping, hiking, or backpacking expeditions. They are also plainly unsuitable for long term storage in anticipation of future shortages or emergency needs. By contrast, OvaEasy Egg Crystals are perfect for such uses. Packed in individual pouches that are sealed in No. 10 cans, they carry a shelf life of at least five years when stored unopened in a cool, dry environment.
They may not want to transport the cans themselves, but by removing and using the sealed pouches, campers and backpackers need not worry about broken and spoiled eggs, or special protective gear in which to transport them. And OvaEasy Egg Crystals are so easy to use! Add water and mix. That's basically it. You'll find. too, that unlike some competitor's products, OvaEasy eggs tend not to clump when trying to rehydrate.
