This is exactly what the title purports: a vegetarian guide to diet and salad. It is both a cookbook and nutritional guide. Dr. Norman W Walker, the author, died in 1984 just shy of his 100th birthday, a surprising age for someone who was once in such frail health. He was British, and became a "raw foodist" early in his life when his own medical ailments threatened that early demise. For him, diet made all the difference.
The book clearly describes chemical elements in foods - protein, amino acids, milk starches, etc., and discusses their role in a healthful or unhealthful diet. Recipes by the dozen are supplied, and though aimed at a vegetarian audience, this is a book that easily belongs in any kitchen.
