Pomona's Universal Pectin is a sugar-free, preservative-free, low methoxyl citrus pectin that is activated by calcium.
Since it does not require sugar to jell, jams and jellies can be made with less, little or no sugar. Some other possible sweeteners are honey, fructose, sucanat, concentrated fruit sweetener, maple syrup, agave, frozen juice concentrate, stevia, xylitol, Splenda or other sweeteners.
Each 1 lb bag of "Pomona's Pectin" contains a 1 oz packet of calcium powder and a sheet of directions and recipes. Besides jams and jellies, Pomona's Pectin can also be used to make aspic, fruit juice jello, sorbet, syrup, jelled pie fillings, and jelled fruit candy. It has even proven itself an excellent product for thickening yogurt.
