This stainless steel canner can be used for either steam or water bath canning jobs. The secret lies in the Innovative canning rack that allows you to use the same canner for both water bath and steam canning jobs. Use it one way for water bath canning. Use it the other for steam canning. The indicator on lid tells you exactly when to start processing.
