The traditional crock pot has withstood the test of time.  It is suitable for almost all types of vegetables including cabbage, pumpkin, cucumber, carrots, and more, although it is most commonly associated with the production of sauerkraut. Stoneware does not require special storage or care and is neutral for all fermented vegetables.

Crock pots come in a number of sizes, so there is sure to be one suitable for use in your kitchen.  The better ones will allow the escape of fermenting gases and prevent the entry of oxygen (that might interfere with the fermenting process) through a simple, air-tight lid and gutter system that also discourages the growth of molds and hinders the development of unpleasant odors.  They will also not contain those undesirable chemicals or compounds that might accidentally leach into any of the foods contained within.

Note should be taken, however, that genuine stoneware is heavy, and this will contribute to higher than normal shipping costs.
